You can find an alternative "Thin" OS for the old machines, which would then allow you to have minimal maintanence to the device. Instead, one of the goals of both VDI and SBC is to move everything back to the datacenter, for consolidated management. You don't want to add another machine that requires updates, patches, and other maintanence. I have to agree with this statement, as one of the primary benefits of VDI and SBC would be otherwise lost.

As Warren pointed out, you can configure your existing machines to perform the PXE boot using something like thinstall or Citrix Provisioning Server (more cost involved there). There are a lot of devices that are able to boot from the network, and would allow you to connect in that manner. What you are referring to with the second half of that question, is known as PXE network boot. However, that all being said, a "Thin Client" can be achieved using otherwise useless/old repurposed machines. Most actual thin client devices on the market fit that mold, in that they are solid state devices with no moving parts (including the disk).
